Guy Town I.PA. (India Pale Ale)A century ago, in this very place, debauchery and drinking were the order of the day. So, quite appropriately, we've created a beer in its honor - Guy Town I.P.A. Highly hopped, with Fuggle and Goldings Hops, this light-colored beer has a medium body, a clean, bitter taste, a flowery aroma and just a touch of risque behavior and questionable character added in the brew. So lift a pint of Guy Town I.P.A. in memory of the "ladies" of ill-repute that once lifted their galsses - and perhaps a few other things - here years ago. And let the debauchery continue. |
| India Pale Ales were popularized in the mid-to-late 1800's in Burton upon Trent, England, by a man known only as Hodgson. This was a time called the "canal era", when travel was slow and limited, and shipping products took long treachorous months. With this slow transport in mind, Hodgson experimented with brewing a beer which would remian fresh through the long journeys, especially the cumbersome trek to India. The result was what is now called an India Pale Ale. Extremely heavily-hopped and higher in alcohol than most beers for stability, an India Pale Ale fermented slowly, en route to it's destination. So, upon arrival, it was fresh, pure and ready to drink. Exactly the way you'll find Guy Town I.P.A. at Waterloo Brewing Company. But without the wait, of course. | |

India Pale Ale
has a high alcohol content and a high hopping rate. The pale to deep copper-colored
ale has a full flowery hop aroma. The use of water high in mineral content
contributes to the dry flavor of the beer. I.P.A's are characterized by
a medium maltiness. |

This is a pale
ale which is substantially hoppier and thus more bitter than any of our
other beers. To put this in perspective, Ed's Best Bitter has a bitterness
rating of 28 IBU, whereas Guytown IPA boasts a whopping 55 IBU!! But don't
let this discourage you from trying it. Guytown is a wonderful example of
of what hops can do for a beer and makes a fantastic apertif. Once you've
developed a taste for hops, you rarely go back. This top-fermented ale brewed with 85% two-row pale malt, 10% caramel 10L malt, and 5% caramel 40L malt. Perle hops are used for bitering, and the always popular cascade hops are added to the end of the boil for flavor and aroma. An English ale yeast ferments this beer to round out its rich and hoppy flavor. |
